Almond pie

Desserts are not my thing, not eating nor making them. Sometimes I crave for sweets, then I’d make some microwave choco cake or just mix chocolate with fruits, I’d eat and regret it and wait 2 months for the next craving.

I regret because after I eat a bunch of chocolate or sweets I feel all nauseate by the sugar taste in my mouth. Though I have my favourite dessert, is super easy to cook it and even better to eat it.

I used to make it with eggs until I tried with bananas and the taste is so much better, you can also try with the apple puree if you are more used to this egg substitute in your kitchen.

Ingredients
  • Base:
  • 200 g flour (wheat or corn flour)
  • 200 g sugar
  • 120 g margarine
  • 1 banana mashed
  • 2 tbsp soya cream
  • ---
  • Top:
  • 100 g sugar
  • 80 g margarine
  • 130 g peeled almonds
  • 5 tbsp milk (soy, almond or up to you)
Directions
  • Step 1 Start with the base for the pie, in a big bowl mix all the ingredients together. Use a spoon for this, mix until is all homogeneous dough. It will feel thicker than a cake dough.
  • Step 2 Place it in a non-stick pie dish. I recommend the silicon ones for quiche/pies.
  • Step 3 Bake it for 15 minutes at 200ºC in the oven.
  • Step 4 In a sauce pot, add all the ingredients for the top and stir in medium eat until the sugar gets almost a caramel texture (brown and thick)
  • Step 5 Take your base out of the oven (do not turn off the oven) and lay the almond mixture on top of the pie base. Spread it well with the back of a spoon
  • Step 6 Get the pie again into the oven and bake it until the top is brown but not burned
