Asian Veggie Cakes

These cakes were inspired by the Chinese turnip cakes, usually it doesn’t have so many ingredients, specially so many different vegetables. Since I want to incorporate more nutrients in my cooks, I thought this would be a delicious way to upgrade the recipe and I wasn’t wrong 🙂

Veggie Asian Style cakes

Ingredients
  • 1 carrot
  • 1 zucchini
  • 1 potatoes medium size
  • 100 g White long Radish (optional)
  • 3 shiitake mushrooms (or other mushrooms)
  • 1 red onion
  • 1 garlic clove
  • 80 g Smoked Tofu
  • 2 tbsp soy sauce
  • 1 spring onion
  • Salt and pepper (or cayenne) to taste
  • 1 tbsp Sesame oil
  • 3 tbsp White flour (rice or wheat flour)
  • Vegetable oil to fry (or just bake it)
Directions
  • Step 1 Grate the carrot, zucchini, potatoes and the radish in a food processor or simply in your grater.
  • Step 2 Grate also the Smoked tofu but I would recommend to use just the grater here, some food processors make it too mushy.
  • Step 3 Reserve all the grated vegetables for later
  • Step 4 Chop the mushrooms, the garlic and the onion into small pieces.
  • Step 5 In one pan, add the sesame oil and fry the mushrooms, garlic and onion until the onion is transparent.
  • Step 6 Add the grated tofu and fry for 1 minute
  • Step 7 Then add the soy sauce while mixing all together.
  • Step 8 Chop the spring onion and stir a bit more.
  • Step 9 Add all the grated vegetables that you reserved before into the pan and let cook in low heat for 10 minutes, season with salt and pepper and stir occasionally to avoid sticking on the bottom of the pan
  • Step 10 Put all the mixture into a big bowl and add the flour. Mix all very well, if you feel the mixture is too moist, add more flour. You should be able to make a cake with your hands but not a sculpture 🙂
  • Step 11 Shape some cakes, the size you prefer (I make them the size of a burger) and fry in a pan with some oil until golden brown or just bake it in the oven for 20 minutes with no oil added.
