Frijoles Refritos and Guacamole for Breakfast

One thing that was backing me up from being completely free from animal products was my beloved cheese. I could eat cheese all day, if you ask me what I could eat for the rest of my life, I would answer bread with cheese (good bread please). I was cooking a lot of vegetarian dishes with tons of cheese, all kind of cheeses, from the crappiest to the most refined. Also my breakfast as far as I remember, always included at least a slice of cheese. More precise, my weekday breakfast was always a slice of bread, a slice of cheese and a cup of dark coffee, sad, I know… so, I wanted something that would substitute the easy “take of the fridge and done” cheese, without eating the so processed that must be worse than ham, the vegan cheese.

 

In a trip to Mexico, I had huge breakfasts (so big or bigger than a lunch) and there I discovered the tasty frijoles refritos, a paste of beans that were fried in a sofrito. And of course, I also tasted the real guacamole, these two pastes/creams are a happy couple in the world of taste. In this recipe, I’m not using onion in the guacamole, I found it was a hardcore taste (and after smell) to have on mornings.

Frijoles Refritos and Guacamole for Breakfast

Ingredients
  • Frijoles
  • 1 tbsp Olive oil
  • Half onion (red or white) chopped
  • 1 garlic clove chopped
  • 1 bay leaf
  • 1 can of black beans drained
  • ---
  • Guacamole (morning style)
  • 1 avocado
  • Half Small Tomato finely chopped
  • 2 tsp chilli pepper chopped (optional)
  • Half lime juice
  • Salt and pepper to taste
  • 1 tbsp coriander chopped
Directions
  • Step 1 Frijoles: Fry the onion, garlic and bay leaf in a pan with olive oil until the onions are translucid
  • Step 2 Add the black beans and let it cook for about 7 minutes
  • Step 3 Take out the bay leaf and put the rest in a bowl, use a blender to turn it into a paste7
  • Step 4 Guacamole: In a large bowl place the avocado pulp and add the lime juice. Mush it with a fork.
  • Step 5 Add the chopped tomato and chilli pepper and mix it well
  • Step 6 Season with salt and pepper.
  • Step 7 Add the Coriander and give a final mix
  • Step 8 Save it in the fridge up to 4 days
