At least 2 years ago I watched a video about this vegan BBQ pork and since then I wanted to try it. This recipe uses Jackfruit as a base, this fruit has a texture that’s completely like shredded meat or fish (next time I’ll try to make a “Tuna” paste with it). In Germany is not easy to find Jackfruit, specially the fresh one, so I bought some cans in Amazon but I’ll need to find a more su$tainable source, probably in an Asian Shop. Also the BBQ that I bought was too sweet for my taste, I had to mix some vinegar and chili sauce to make it more interesting.
In this recipe I did my own vegetable stock, just boiled a carrot, celery, onion, garlic, parsley and some other vegetables I had in my fridge and let it cook in low heat for 1 hour. This stock has no salt, so I had to add much more cooking the jackfruit than if you buy one in a supermarket that can have already a good amount of salt. Just pay attention to that.
Pulled Pork Jackfruit

Ingredients
- 1 can Jackfruit in water (not the sweet one)
- 60 g of grated smoked tofu
- ½ sliced onion
- 2 garlic cloves
- 1 tbs Olive oil
- 1 tsp smoked paprika
- ½ tsp cumins
- ½ tsp nutmeg
- ½ tsp cayenne pepper
- 1 tsp mustard
- 1 tbsp tomato paste
- 1 cup vegetable stock
- Salt and pepper to taste
- ½ cup of BBQ sauce
Directions
- Step 1 Cut the hard “heart” of the jackfruit pieces and throw it away, start to shred the fruit and get rid of the seeds too (optional because the seeds are edible).
- Step 2 Rinse the jackfruit very well until is not smelling fruity anymore.
- Step 3 In a pan with olive oil, fry the onions and garlic until translucid. Add the spices, tomato paste and mustard and let it cook for 1 minute.
- Step 4 Add the grated smoked tofu and the jackfruit. Cook for 3 minutes and then add the stock and a tablespoon of BBQ sauce. Cover with a lid and let it cook for 5 minutes in medium heat.
- Step 5 Take the lid off, taste it and season if needed, let it cook in high heat until the stock is gone.
- Step 6 Place the mixture in a oven tray and bake it for 8 minutes in 250ºC (preheated oven).
- Step 7 Take the tray out of the oven and mix the rest of the BBQ sauce in the “meat”. Bake it again for about more 6 minutes.
- Step 8 Serve it in a bun with coleslaw salad to get a real southern style sandwich (no idea abouth that, never been there…)
