That’s a speciality from Madeira, one of the Portuguese islands in the Atlantic Ocean. Traditionally to eat with garlic butter, now you can find in any sandwich/burger restaurant around Portugal (at least in Lisbon). Super tasty and with a boost of vitamin A “to make your eyes prettier” -according to all the portuguese Grandmas. I tried a recipe from the world wide web but it seemed to need much more flour than it was supposed to. I’ll give you the original measurments but with the warnings I would like to have had when trying out this recipe.

Ingredients
- 350g sweet potato in pieces
- 350g white flour (you'll need more)
- 9,2g dry yeast
- 1 tsp salt
- 150ml water (potato stock)
Directions
- Step 1 Boil your sweet potatoes until they get soft, around 15 min.
- Step 2 Reserve the water to use later and in a bowl smash the potatoes. Let it cool for 10min.
- Step 3 In a big bowl add the yeast and the water. Mix well for a few minutes.
- Step 4 Add the smashed sweet potatoes and stir while seasoning with salt, add also the flour and work the dough.
- Step 5 Add more flour if you feel it’s too wet, in the end it should be a sticky dough, not dry at all.
- Step 6 Let it rest for 30 minutes – covered.
- Step 7 Make 7 balls from the dough, you’ll need to use additional (ou more) flour so that it doesn’t stick everywhere. Press with a dough roller to make flat discs of around 1,5 cm height. Let it rest for 15 minutes with a cloth covering it.
- Step 8 In a pan without any oil, cook the discs for 15 minutes each side in low heat.
