I made my first burrito after some episodes of Dexter where some characters eat big american burritos from a food truck. At that time I never had tried real burritos nor even fake ones. The only Mexican restaurant at that time in Lisbon was expensive and not that good, I learned that after…

 

That said, my burritos do not taste like the real stuff I tasted in Mexico but this doesn’t mean I changed the way I make them. My burritos are tasty and super easy to cook. My burritos are one of my favourite comfort food.

 

You can use wraps from the supermarket or DIY (recipe here).

Burritos inspired by Dexter 😉

Ingredients
  • Bean sauce:
  • 3 cm leek chopped or 1 small onion
  • 2 garlic cloves
  • 1 bayleaf
  • 2 tbsp Olive oil
  • 1 tbsp paprika powder or 2 tbsp chopped red bell pepper
  • 1 tsp cayenne pepper or 2 tsp chopped chilli pepper
  • 2 tsp mustard
  • 2 tbsp tomato sauce
  • ½ tsp Salt
  • 1 can of kidney beans
  • 2 tsp thyme
  • 1 small can of sweet corn
  • 2 tbsp chopped coriander
  • 1 pack of 6 tortillas/wraps
  • ---
  • Simple rice:
  • 100 ml water
  • 50 g white rice
  • Salt to taste
  • ---
  • Guacamole:
  • 1 Avocado smashed
  • ½ Lime juice
  • ½ Onion chopped
  • ½ Tomato chopped
  • 1 tbs chilli pepper chopped
  • Salt and pepper to taste
  • 1 tbsp coriander chopped
  • ---
  • Extras (optional):
  • Lettuce
  • Ketchup
  • Chips
  • Nutritional Yeast
Directions
  • Step 1 Simple rice:just add everything in a pot and cook it until the water is gone.
  • Step 2 Beans sauce: In a saucepan, fry in the olive oil the leek, garlic and bay leaf until the leek is tender (3 to 4 minutes)
  • Step 3 Add paprika, cayenne pepper and the mustard, let it fry for a bit.
  • Step 4 Pour the tomato sauce and stir fry for 2 minutes. Season with salt.
  • Step 5 Open the bean’s can and just throw everything (beans and sauce) in the pan.
  • Step 6 Mix all together and add thyme. Let it cook in low heat for 10 minutes, or until the beans are nicely done (not mushy, not crunchy).
  • Step 7 Turn off the heat and add corn and coriander.
  • Step 8 Guacamole: Mix all the ingredients in a bowl and smash with the help of a fork.
  • Step 9 Assemble: Place the wrap in a dish (warm up before in the microwave or pan if it’s from the supermarket), fill with the rice, beans and guacamole. You can crunch some chips and add it or also ketchup and lettuce (to make it more green). Add nutritional yeast for a cheesy flavour.
  • Step 10 Serve with tortilla chips and the rest of guacamole on the side.
